10th Cavalry in 1911Sometime in 1911, 10 companies of the 10th Cavalry moved from Fort Allen, Vermont to Virginia. On the way, they made camp for two days in Sidney, New York. Local residents Joseph and Mary Herrick took these pictures. They observed at the time that each company had its own section in the encampment and its own cooking equipment. They used stoves and ovens made of collapsible sheet iron. The Herricks witnessed the preparation of a meal and reported seeing one trooper cooking "hamburg in large pans in the oven", and another cooking bacon while biscuits were being stirred for baking.
